This delicious Insta-Pot Lentil Soup recipe is easy to make and ready in to serve in 20 minuets. As winter approaches you and your family will love the taste of this hardy lentil soup.
STEP 1. In the base of the instant pot, combine the 3 carrots sliced, 3 pieces of celery chopped, ¾ of one medium onion finely chopped, 1 medium potato pealed and diced to bite size, 4 cloves of garlic minced, 2 cups of rinsed brown lentils, 8 cups of vegetable broth, 1 8 ounce can of tomato sauce, 1 cup of water, 1 Tablespoon of ground cumin, 2 Teaspoons of ground coriander, ½ Teaspoon of turmeric, 1 bay leaf, 1 Teaspoon of salt and ½ Teaspoon of black pepper.
STEP 2. Cover the Instant Pot with the lid and lock it into place with the steam release handle in place to seal. Select HIGH PRESSURE and set the timer for 10 minutes. When the timer is up, let rest for 10 minutes, then manually release the pressure, then unseal the steam release handle. Unlock and remove the lid, be careful of any remaining steam. Remove the bay leaf.
STEP 3. Drizzle of about ¼ cup of extra virgin olive oil and an additional pinch of black pepper for even more flavor, serve with a side of white steamed rice if you like.
