INGREDIENTS:
4lbs. of country-style ribs
3 tablespoons of your favorite barbecue seasoning mix
1/2 cup of your favorite barbecue sauce
3/4 cup of any variety of dark soda (I love root beer…can also use apple juice)
PREPARATION:
Add your country-style ribs directly into the Instant Pot inner metal pot (use of the trivet is not recommended);
Sprinkle the ribs with the barbecue seasoning mix;
Next, add the barbecue sauce and soda;
Mix all the ingredients together very well, making sure the ribs are dunked and turned a number of times, so as to thoroughly soak them in the mixture (tongs are great for achieving this goal!);
Then, lock the lid on the Instant Pot lid, turning the pressure knob from venting to sealing;
Cook on Manual setting, high pressure for a cooking time of 35 minutes;
After the 35-minute cooking time has expired, allow the pressure to naturally release for at least 15 minutes;
As soon as you take the ribs out, they should be very tender and ready to enjoy. If you prefer, you can place the ribs onto a foil-lined baking sheet, baste them with extra barbecue sauce, and broil (typically, 500 degrees to 550 degrees) them in the oven for about three to five minutes to achieve a caramelized coating. I have not tried this last step yet but plan to do so soon.
