STUFFED GREEN PEPPER RECIPE

Cooking Time: 1 Hour
STEP 1
Ingredients for Stuffed Bell Peppers:
• 4 medium-sized sweet green bell peppers (large green peppers will work best)
• 1 tablespoon olive oil
• 1 pound lean ground beef
• ½ cup chopped yellow onion
• 1 teaspoon diced garlic or (powdered garlic)
• ½ teaspoon kosher or (table salt)
• ¼ teaspoon ground black pepper
• 1 cup cooked rice (leftover rice okay)
• Grated Parmesan cheese
• 24 ounces tomato sauce or pasta sauce (You can substitute with a can of diced tomatoes, I prefer this method better)
STEP 2
Preheat your oven to 375 degrees Fahrenheit – (about 177 Celsius). Rinse the peppers in cool water and cut off to remove the pepper tops with a sharp knife. Remove the core and seeds, then set them aside.
STEP 3
For the rice filling:
In a large 10-inch skillet, drizzle about one tablespoon of olive oil, warm olive oil on medium-high heat, then add the chopped onions and sauté until translucent.
Add the one-pound ground beef and cook over medium heat for about 10 to 15 minutes or until it is no longer pink. Drain fat if needed and reduce to low heat.
1). Add garlic, salt, and black pepper to the beef. Stir all ingredients with a wooden spoon over low heat until combined.
2). Add cooked white rice and 1 1/2 cups of pasta sauce or (diced tomatoes w/juices) to the skillet and mix thoroughly.
3). Stuff peppers by placing the mixture evenly into each bell pepper pressing mixture gently into the green peppers.
Place all four stuffed bell peppers on to baking dish and add about two cups of water around the peppers (water should cover about ½ of the bell peppers). Cover bell peppers tightly with foil, and bake in the preheated oven for about 50 minutes or until the peppers are nice and tender.
SERVING
Remove the bell peppers and place on a serving dish and let cool for 5 minuets, pour the remaining pasta sauce or (diced tomatoes) into a microwave-safe bowl, cover with a paper towel, and cook for one minute then pour sauce or (diced tomatoes) over the bell peppers and sprinkle them with Parmesan cheese and serve!
You can serve as a meal, or with a side of mac & cheese or mashed potatoes and brown gravy.
